- Cut the sweet potato into thin even slices and shape. Not only will it improve the appearance, but bake the potatoes to perfection. Thus, make sure to choose a sweet potato with similar sizes so you can create uniform slices.
- It helps to use a mandolin to create even slices, but a knife will work as well.
- Place the sweet potato slices on a single layer in a baking tray lined with parchment paper. Do not stack them in order to bake the potatoes completely.
- Line the sweet potatoes on parchment paper to prevent them from sticking. If you don’t have parchment paper, a non-stick tray or container works.

Baked Sweet Potato Slices Tips And Alternatives
You only need sliced sweet potatoes that are dipped in 2 beaten eggs and cornstarch. After that, the half-baked potatoes are coated with honey and sprinkled with black sesame seeds. The ingredients are simple and can be substituted with other alternatives if you prefer.
Here are several tips and alternatives to consider:
- Sweet potato: As mentioned, you can use orange sweet potatoes or other types that are available to you. The potatoes can be baked with or without the skin on. After baking, you can make it even crispier by air-frying or broiling it. Keep in mind that sweet potatoes are different from yams. - Eggs: Make it taste eggy with beaten eggs. This also helps give it a golden brown color and crinkly texture. If you want it eggless for a plant-based or vegan version, use chickpea flour and water slurry. Mix 3 tablespoons of chickpea flour with 3 tablespoons of water. Then, season it with a pinch of black salt, the best salt to add an eggy taste and odor.
- Cornstarch: Mixing cornstarch with the beaten eggs also adds a slightly crisp texture and golden brown color to the outer layer of the sweet potato slices. Moreover, it also prevents the sweet potato slices from overcooking and drying out because it serves as an extra layer of protective coating. To substitute cornstarch, use tapioca flour or potato starch. For 1 tbsp of cornstarch, substitute it with 2 tbsp of tapioca flour or 1 tbsp of potato starch. You can also use all-purpose flour or rice flour as a last resort.
- Coating: The sweet potato slices are coated with honey and black sesame seeds. Honey makes it sweet, while black sesame seeds add a nutty, earthy, and slightly bitter taste. You can replace honey with maple syrup, agave syrup, or corn syrup for a vegan alternative. If you want a milder taste than black sesame seeds, use white sesame seeds instead.

How To Make Baked Sweet Potato Slices

- In a bowl, mix two eggs and two tablespoons of cornstarch using a whisk. Coat each sweet potato slice with the egg mixture. Let the mixture drip a bit from the potato slices before placing it on the tray. Otherwise, the tray will be too wet and overflowing with the egg mixture.
- Place the coated sweet potato slices on a baking tray lined with parchment paper. Line them on a single layer. Do not stack. You don‘t need to leave ample space in between since these will shrink up a bit as they bake.
- Bake the sweet potatoes at 200°C or 392°F for 20 minutes. After 20 minutes, the outer layer should crisp up and puff up. As it bakes, avoid opening the oven to prevent the heat from escaping. Otherwise, the potatoes will not cook well with uneven heat.
- Next, remove them from the oven, brush them with honey, and sprinkle with black sesame seeds. Bake again at 200°C or 392°F for an additional 15 minutes until the honey caramelizes. If you prefer an air fryer method, air fry them at 180°C or 350°F for 12 to 15 minutes or until golden brown and cooked through. Make sure to add the honey and black sesame seeds halfway through the cooking time.
