Super Easy Accordion Potatoes Recipe (A Viral TikTok Recipe!)

It may look challenging to make because of its intricate pattern, but it is actually super easy! Trust me, all you need to do is follow the way I cut it to make the same accordion pattern. Make this in 30 minutes or less in 10 simple steps all outlined below.

Why Are Accordion Potatoes Such a Hit?

Do you love potato recipes for snacks or an appetizer? You are probably over with the typical potato recipe, such as Sweet Potato Balls, Salt And Pepper Potatoes, and Chinese-Style Salt And Pepper Chips. So in today’s recipe, we are going to make it fun and out of the ordinary with accordion potatoes.Accordion Potatoes

Accordion potato in skewers became a sensation probably because of its complex cut pattern and Instagrammable look. It is no wonder it has become a popular street food in various Asian countries, especially in night markets. Now, you can make your own with 10 simple steps using my easy-to-follow recipe.

It is amazing how easy it is to make it with basic steps, including cutting the potatoes into rectangles, slicing the pattern, and cooking in the air fryer with skewers. I cooked the accordion potatoes in the air fryer to give a crispy texture with minimal oil. Add more flavor with your choice of topping, such as tomato ketchup, mayonnaise, or cheese.

All About The Ingredients

The potato is your main ingredient. Then, simply customize it with additional toppings or coating to make it more flavorful! Here are some suggestions and alternatives to consider.

  • Potato: The potatoes are cut into a rectangular shape before slicing straight and diagonal lines. I recommend using large potatoes to make longer accordion potatoes in skewers. If you use small potatoes, you will need to peel and cut more potatoes if you want a large amount to serve. I used regular potatoes, but you can also use sweet potatoes, russet, or Yukon Gold potatoes as an alternative. Keep in mind each type of potato will have varying taste and texture.
  • Cut out potatoes: Since the potatoes are cut into rectangles, there will be small pieces left. In Kitchen Misadventures, there’s no room for waste. You can use the leftover cut-out potatoes to make Chinese-Style Salt And Pepper Chips.
  • Oil spray: The key to getting a crispier and golden brown exterior is spraying a bit of oil before cooking in the air fryer. If you prefer oil-free, you can skip this and simply cook it without the oil.
  • Toppings: The fun part is adding toppings. Top it with sauces, flavored powder, or dressings. Here are some delicious toppings to try:
    • Tomato ketchup
    • Mayonnaise
    • Mustard
    • Sriracha
    • Tabasco
    • Sour cream
    • Cheese sauce
    • BBQ sauce
    • Ranch dressing
    • Cheese powder
    • BBQ powder
    • Curry powder
    • Regular salt or flaky sea salt
    • Black pepper powder
    • Butter
    • Garlic butter (can be used as a topping or coating before air-frying)
    • Salt And Pepper Seasoning

How To Store Accordion Potatoes

I recommend eating the accordion potatoes right away to get the best taste and texture. If you have leftover cooked accordion potatoes, you can keep them in the fridge for up to 3 days.Accordion Potatoes3

When you are ready to eat the leftovers, it is best to reheat it in the oven or air fryer for about 5 minutes to have a crispy texture. Avoid reheating in the microwave since it will only make the potatoes soggy.

Ingredients And Kitchenware To Prepare

Aside from the easy steps, I like that you only need to prepare basic kitchen tools. You will need chopsticks to align your potatoes for cutting, but you can also use the bamboo skewers to do the same step.

Prepare your knife and chopping board for cutting and your air fryer. If you don’t have an air fryer, use an oven or deep fry it in a pan.

For the ingredients, here’s what to prepare:

  • 2 large potatoes (or more if you like)
  • Oil spray (optional)
  • Topping (such as tomato ketchup, mayonnaise, flavored powder like cheese, sour cream, or BBQ sauce)

Detailed Steps To Make Accordion Potatoes

Do this recipe in 10 easy steps. The most important step in my opinion is the slicing part, the one that will make the accordion design pattern. You can watch my Instagram or TikTok tutorial video to get a clearer picture of how I cut the potatoes.

  3. Place the potatoes on a chopping board and arrange the chopsticks or bamboo skewers on both sides of the potato. 4. Slice the potatoes lengthwise without cutting all the way through. I recommend 1/4-inch wide slices and not too wide. Narrower slices make it easier to open up the accordion potatoes.
  5. Next, flip the potatoes to the other side and cut diagonal slices. Make sure the chopsticks or bamboo skewers are still placed on the sides. After cutting, you should be able to make a spring-like motion, similar to a slinky.flip the potatoes to the other side and cut diagonal slicespotatoes after cutting

      Hi Cynthia,
I usually secure the potatoes with one hand and insert the skewer from one side to the other.
Alternatively, you can place the potato on a flat board, stabilize it with one hand, and then thread the skewer from the top down.

Please ensure that the bamboo skewer is an appropriate size for the potatoes. If it’s too thin, it might break or splinter. If it’s too thick, it could be challenging to insert.
