Crispy oyster omelet is a popular night market snack, especially in Taiwan and many Asian countries. You may know this as Taiwanese oyster omelet, a classic street food snack in the market. This single dish provides a variety of textures – crispy, fluffy, juicy, and velvety.
Making this dish is just like how you make a regular omelet, with just an additional step in preparing the fresh oysters. In this recipe, the oysters are coated with cornstarch, cleaned, and blanched. Then, we make the egg batter and cook it in the pan with the oysters.
The egg mixture contains potato flour with water, chopped scallions, coriander, preserved mustard stem, fish sauce, and a pinch of black pepper powder. You get a crispy crust with the help of the potato flour and the juiciness of the oysters. Have this for brunch or a light snack and serve it with sweet chili sauce, sriracha sauce, and your favorite beverage.

- Oysters: Use fresh or frozen oysters. Clean it by coating it with cornstarch and rinsing it afterward. In this way, you can remove any dirt and impurities. You will also need to parboil it for about 10 seconds in order to pre-cook it before adding it to the eggs. This also helps in removing any unpleasant smell.
- Potato flour: You need this ingredient to make a crispy crust. It will be tender on the inside with a nice crunch on the outside. Alternatively, you can use cornstarch, potato starch, tapioca starch, or rice flour. However, the texture will vary depending on the type of flour or starch used. For instance, tapioca starch will make it chewy, whereas cornstarch thickens it and creates a crispy crust.
- Eggs: I used three eggs for the recipe. You can use medium or large whole eggs.
- Chopped scallions and coriander: Scallions and coriander add flavor and color to the omelet. You get an oniony taste with scallions and a touch of fresh citrus taste with coriander. Alternatively, you can also use cilantro for a similar citrus taste. After cooking the eggs, add more scallions and coriander as a garnish.
- Preserved mustard stem: This is an optional ingredient for extra flavor. You may also know this as Sichuan Zha Cai and is commonly packed in jars and cans. It is slightly spicy with a salty and sour taste.
- Fish sauce: Fish sauce is fishy, pungent, salty, and briny. If you don’t have fish sauce, you can swap it with soy sauce, tamari, oyster sauce, and Mushroom and soy sauce broth. It can also be omitted from the recipe and use salt instead.

Clean The Oysters

Next, bring a pot with water to a boil and parboil the oysters for about 10 seconds.
Prepare The Egg Batter
Prepare the egg batter by mixing 2 tablespoons of potato flour with just enough water to achieve a smooth consistency.
Mix the potato flour mixture once more before adding the three eggs.
Then, add chopped scallions, coriander, and preserved mustard stem (optional for extra flavor).
Next, add the cooked oysters.
Season the egg mixture with a dash of fish sauce and a pinch of black pepper powder. Adjust the seasonings according to your liking.
Cook The Egg Batter
Heat the pan with some cooking oil until hot. This is an important step in achieving the perfect crispy crust.
Once the pan is hot, pour in the egg mixture. Make sure it is evenly distributed on the pan.
Allow it to set while swirling the pan clockwise. Do this step while keeping it in contact with heat.
Then, carefully flip it to cook the other side.
Continue cooking over low heat until both sides are golden and crispy. It’s critical to maintain the right balance of heat here, ensuring it is evenly distributed to prevent brown splotches. Cooking the omelet slowly helps make it fluffy as well.
When it’s perfectly crispy and golden, remove the omelet from the pan.
