What Is Shrimp Chow Fun Recipe (蝦仁炒粉)?

Shrimp chow fun is similar to beef chow fun in cooking style and ingredients. Its main ingredient is the fresh wide rice noodles, also known as hor fun, hòh fán, and 河粉 in Chinese. When you see these flat and wide noodles, you will automatically know it is a chow fun dish.Shrimp Chow Fun

The best thing about this dish is that you can use your favorite ingredients, from meat to vegetables and seasonings. Not only can you add beef like my Chinese Beef Chow Fun, but you can also incorporate seafood like shrimp chow fun. In this recipe, I loaded the wide rice noodles with cooked shrimp, scrambled eggs, mushrooms, green onions, and garlic.

Then, I seasoned it with salt, light soy sauce, dark soy sauce, and cumin powder. This dish is typically cooked on a wok to achieve the signature wok hei or “breath of a wok”, but a regular pan will do. Customize this dish the way you like it with your preferred ingredients and seasonings. I share below the ingredients I used and how to alter them. You will also read about other optional ingredients you can use to make the ideal shrimp chow fun.

  • Fresh wide rice noodles: Use fresh or dried wide rice noodles. This Asian noodle is available in local Asian stores or in the international section of a grocery store typically packed in plastic packaging in sheets or pre-cut. If you can’t find fresh wide rice noodles, use other Asian rice noodles or dried rice noodles.
  • Shrimp: Use frozen shrimp that are already cut and peeled and cook it before adding to the noodles. If using fresh shrimp, you will have to peel the skin, remove the tails, and devein it.
  • Scrambled eggs: I used 2 eggs to make scrambled eggs. Go for medium or large eggs. You don’t need a whole intact scrambled egg since you will need chunks of scrambled eggs that are separated. This makes it easy to spread throughout the noodles.
  • Green onion: Green onions or spring onions have a slight sweetness and mild oniony taste. If you don’t have green onions, swap them with chives, shallots, white onions, yellow onions, or red onions.
  • Garlic: Give the dish a nutty and garlicky taste with minced garlic. If you don’t have garlic but want the garlicky flavors, you can substitute 1 clove of garlic with 1/8 tsp of garlic powder or 1/4 tsp of granulated garlic. You can also use my recipe, Crispy Fried Garlic.
  • Mushroom: Use any type of mushroom, such as shiitake mushrooms, button mushrooms, portobello mushrooms, and king oyster mushrooms. Keep in mind the taste and texture will vary, depending on the type of mushroom. One thing to note about mushrooms is that they should be cooked on high heat to remove moisture. You don’t want watery mushrooms that go soggy or cause the other ingredients to be too wet. Dried mushroom like dried shiitake mushroom is also an excellent choice if you want a deeper smoky and meaty taste.
  • Vegetables: Some vegetables to use are bamboo shoots, spinach, cabbage, gai lan, napa cabbage, bok choy, and yu choy. Bean sprouts are a common ingredient for chow fun, loved for their nutty and earthy taste. You can also add chives for a mild onion and garlic taste. Aside from green vegetables, you can also add a cup of roasted peanuts for an earthy and nutty taste with a bit of crunch.
  • Seasonings: Season the dish with salt, light soy sauce, dark soy sauce, and cumin powder.
    • Salt: Enhance the overall flavor with salt, such as sea salt, kosher salt, or table salt.
    • Cumin powder: Add depth and a warming kick with cumin. It also imparts a citrus and earthy taste.
    • Dark and light soy sauce: Dark soy sauce is ideal for adding a deep color and thick outer layer to the noodles. You will also need light soy sauce to bring in an umami and salty taste. It is possible to interchange the two types of soy sauce in case you don’t have the other one. Aside from light and dark soy sauce, you can use tamari, liquid aminos, coconut aminos, or gluten-free soy sauce.
    • Optional seasonings: Change the overall flavor with these optional seasonings:
      • Black pepper powder – Adds heat and piney taste.
      • White pepper powder – Makes the dish musty and earthy with mild heat.
      • Oyster sauce – Imparts a sweet and savory taste with a hint of caramel-like taste.
      • Chili-garlic sauce – Gives the dish a tangy and spicy taste.
      • Sugar – Helps balance out the spicy and salt flavors by adding sweetness.
      • Sesame oil – Adds more Asian flavors with its earthy and nutty taste.
      • Shaoxing wine – Gives a slightly sweet and briny taste.

Ingredients And Kitchenware To Prepare

You only need to prepare two main kitchen items: a knife and a wok. If you don’t have a wok, use your regular non-stick pan. Here are the ingredients to prepare:

  • 500g of fresh wide rice noodles
  • 2 eggs (for scrambled eggs)
  • 20g of green onions
  • 20g of minced garlic
  • 20g of shiitake mushrooms(sliced), I prefer using fresh shiitake mushrooms, so there’s no need to rehydrate them.
  • 100g of vegetables
  • 2 tablespoons of cooking oil, with one reserved for scrambled eggs and the other for chow fun. I prefer using peanut oil for this recipe.
  • 1 teaspoon of salt
  • 1 tablespoon of light soy sauce
  • 1 tablespoon of dark soy sauce
  • 1 teaspoon of cumin powder
  • 150g of shrimp
  • 20g of green onions (garnish)

How To Cook Shrimp Chow Fun
