In this dumpling sauce recipe, I used 8 ingredients: green onions, ginger, garlic, sugar, chicken bouillon powder, Zhenjiang vinegar, light soy sauce, and sesame oil. With the mix of 8 spices, you will enjoy a combination of garlicky, tangy, umami, sweet, and peppery flavors. The ingredients are chopped and combined in one spice jar ready for storage. This dipping sauce pairs well with all dumplings, whether it is fried, steamed, or boiled.

What Ingredients To Use For Dumpling Sauce

The ingredients are all customizable according to your liking. It is up to you if you want to omit or change an ingredient entirely. You can change the flavor to something sweeter, spicier, or tangier.

Dumpling dipping sauce can be made with the following ingredients:

  • Green onions: Green onions or spring onions have an onion and slight sweetness to them. It is milder than regular onions. You don’t have to finely chop these, just chop them according to the size of your container. If you don’t have green onions, you can substitute this ingredient with chives, shallots, white onions, yellow onions, or red onions.
  • Ginger: Ginger adds peppery and a warming kick to the sauce. Chop this into thin slices to let the flavors ooze out in the sauce container. You can swap fresh ginger with ground ginger if you still want the ginger’s flavor profile. Use 1/4 to 1/2 tsp ground ginger for every 1 tbsp of fresh ginger.
  • Garlic: Garlic adds a nutty and pungent taste to the sauce. You only need to crush the garlic. If you don’t have garlic but want the garlicky flavors, you can substitute 1 clove of garlic with 1/8 tsp of garlic powder or 1/4 tsp of granulated garlic.  
  • Sugar: The sugar will balance out the salty flavors of the light soy sauce and the tangy taste of the vinegar. You can use any type of sweetener, including white sugar, cane sugar, brown sugar, maple syrup, or coconut sugar.
  • Bouillon powder: Chicken bouillon powder enhances the overall taste of the sauce. You can use vegetable powder to make it vegan or vegetarian. Aside from powders, you can also use canned broth or Italian seasoning mix.
  • Chinese black vinegar: Look for Chinese black vinegar, Chinkiang vinegar, or Zhenjiang vinegar in Asian grocery stores or Amazon. It is fruity, tangy, and slightly sweet. If you need to replace this, use balsamic vinegar, date vinegar, or red wine vinegar. However, the taste won’t be the same as Chinese black vinegar.
  • Light soy sauce: I used a 1:1 ratio for light soy sauce and Chinese black vinegar. It makes the sauce savory, salty, and umami. Aside from regular soy sauce, you can use tamari, liquid aminos, coconut aminos, or gluten-free soy sauce.
  • Sesame oil: Lastly, a tablespoon of sesame oil adds a nutty and earthy taste with a slight sweetness. Its nutty taste is strong, which you will not be able to find in other types of oil. However, if you need to replace this, you can use peanut oil, avocado oil, and soybean oil.

How To Store The Dumpling Store

Generally, you can keep it in the fridge for up to 2 weeks. The fresh ingredients used for the sauce are preserved longer because of the light soy sauce and vinegar. Light soy sauce helps prevent microbial spoilage, while the vinegar has a natural preservative because of the acetic acid.

Ingredients And Kitchenware To Prepare

You will need a kitchen knife and chopping board to cut the ingredients. Then, choose your sauce container with a good seal. Here are the ingredients to prepare:

  • 2 to 3 stalks of green onions
  • 1 ginger (thinly sliced)
  • 5 crushed garlic cloves
  • 1 tsp of sugar
  • 1 tsp of chicken bouillon powder (or vegetable powder)
  • 50ml of Zhenjiang vinegar
  • 50ml of light soy sauce
  • 1 tbsp of sesame oil
