What Is Pork Floss?

Before anything else, do you know what pork floss is? If not, pork floss is a popular Chinese snack and condiment used in various dishes. You may also know it as meat floss, meat wool, and rousong (肉松).Pork Floss

It is made by drying and shredding pork meat into thin strands. Aside from pork, beef and chicken (such as chicken floss) are also used to make meat floss. It gets its intense flavor with the added seasonings, such as scallions, ginger, cooking wine, sugar, and light soy sauce.

Pork floss is used in numerous ways, from fillings to toppings and garnishes. It can be a filling for buns, sandwiches, and rolls or as a topping for salads, crackers, soups, and congee. In this recipe, we use pork floss as a coating for the cake for a fluffy exterior.

Where To Get Pork Floss?

You can buy pork floss in Asian grocery stores and online supermarkets like Amazon. It is typically packed in jars or plastic packaging. If you are looking for vegetarian or vegan floss options, I recommend meat-free floss like mushroom floss, sesame seaweed soya shreds, or vegetarian pork floss.

In this recipe, you will cook the meat in water, scallion, ginger, and cooking wine and then tear it into shreds. Then, the shredded meat is fried in a pan with sugar, light soy sauce, and cooking oil before rubbing and tearing it into finer strands.

Ingredients For Pork Floss Cake

To fulfill this recipe, you need to make the cake dough, cheese coating, and pork floss covering. These are the three main parts of the cake to make it fluffy and cheesy. The ingredients you need for each part are detailed below.

Cake Dough

  • Separated egg yolk and egg white: In this recipe, the cake dough uses two batter mixtures: egg yolk and egg white batter. The egg yolks and whites are separated to have a better texture.
    • Egg yolk batter:Egg yolk + corn oil + milk + low-gluten flour
      • A separate egg yolk batter ensures a rich, thick, and moist cake base.
      • Corn oil: Corn oil has a neutral taste and is lightweight.  This adds moisture and fluffiness to the cake. Other neutral-tasting oils can be substituted, such as peanut oil, soybean oil, or vegetable oil.
      • Low-gluten flour: To create a softer, crumblier texture, we use low-gluten flour. Low-gluten flours include pastry or cake flour, barley flour, spelt flour, rye flour, and all-purpose flour. High-gluten flour, such as bread flour or 00 flour, will make your cupcakes chewy, elastic, and dense.
      • Milk: Adding milk to the dough balances out its sourness and adds a rich and creamy flavor. You can use regular, soy, oat, or almond milk. Water can be substituted for milk if you don’t have any.
    • Egg white batter:Egg white + lemon juice + sugar
      • An egg white mixture makes the cake light and airy. It adds more volume compared to when an egg yolk and white are beaten together. When making the egg white batter, we add a dash of lemon juice and sugar.
      • Lemon juice and sugar: Lemon juice helps make a frothy and firm whipped egg white mixture, whereas sugar creates a thick and more stable structure. You can replace lemon juice with vinegar, tartar powder, or tartar cream.

Cheese Sauce

  • The cheese sauce is a mix of butter, low-gluten flour, milk, salad dressing, and cheese slices.
  • Butter and milk: Butter is ideal for added softness and aroma, whereas milk adds richness and flavor. You can use unsalted or salted butter. Margarine, vegetable shortening, and applesauce are excellent alternatives to butter.
  • Cheese slices: In this recipe, you will need 7 slices of cheese, which is about 20g per slice. If you don’t have cheese slices, you can use mozzarella, provolone, gouda, or other cheeses for melting.
  • Salad dressing: This will add more flavor and creaminess to the sauce.
  • Low-gluten flour: We add a bit of flour to make the sauce creamy and make it easier to stick to the cake without being too runny.

Here’s a list of everything you need to get started. Keep in mind some of the kitchen tools are optional, but are highly recommended for better results and convenience.

  • Mixing bowls (You will use it for the two batter mixtures and cheese sauce.)
  • Sieve (You will need this to separate clumps for a better cake texture.)
  • Whisk
  • Electric hand whisk mixer (This tool will make it easier and faster to make a foamy egg white batter.)
  • Silicone spatula
  • Pastry bag or piping bag (Transferring the batter to the baking tray is easier and more convenient with this tool. If you dont have one, you can simply scoop out the batter when transferring.)
  • Baking tray
  • Oven
  • Cooking pot or pan
  • Tray for pork floss (Or any container to place the pork floss for coating)

Egg Yolk Batter

  • 4 egg yolks
  • 40g of corn oil
  • 50ml of milk
  • 60g of low-gluten flour

Egg White Batter

  • 4 egg whites
  • A dash of lemon juice
  • 5g of sugar

Cheese Sauce

  • 20g of butter
  • 5g of low-gluten flour
  • 100ml of milk
  • 30g of salad dressing
  • 7 slices of cheese

Coating

  • Pork flossor other meat floss such as chicken floss (adjust the amount according to need)

Step-By-Step Instructions For Pork Floss Cake

The recipe is divided into five main parts:

  • Make the egg yolk batter
  • Make the egg white batter
  • Combine and bake the batter
  • Prepare the cheese sauce
  • Assemble the pork floss cake

Make The Egg Yolk Batter

  1. Separate the 4 egg yolks from the whites.
  2. In a bowl, mix 40g of corn oil and 50ml of milk.
  3. Then, add 60g of low-gluten flour. Use a sieve to sift the flour for a better texture.
  4. Mix the batter using a Z-shape motion.
  5. Next, add the egg yolks and mix thoroughly.

Make The Egg White Batter

  1. In a bowl, use an electric hand whisk mixer to whisk the 4 egg whites and a dash of lemon juice.
  2. As you whisk, gradually add 50g of sugar. Add the sugar in 3 portions. Adding the sugar gradually prevents the overall mixture from collapsing.
  3. Continue whisking until you form a white and foamy mixture.

Make The Egg White Batter

Combine And Bake The Batter

  1. Combine a portion of the egg white batter with the egg yolk batter.
  2. Then, combine this mixture with the remaining egg white batter and mix well.
  3. Transfer the batter to a piping bag.
  4. In a baking tray, squeeze out the amount of batter according to your desired cake size.
  5. Place the tray in the oven preheated at 160°C (320°F) and bake for 18 minutes.

Prepare The Cheese Sauce

  1. While baking, make the cheese sauce by melting the 20g of butter in a pot.
  2. Add the 5g of low-gluten flour and mix well.
  3. Then, pour 100ml of milk and 30g of salad dressing.
  4. Mix the sauce well.
  5. Next, combine 7 cheese slices and stir until it melts and becomes smooth.

Prepare The Cheese Sauce

Assemble The Pork Floss Cake

  1. Pour the cheese sauce into a bowl.
  2. Take two pieces of cake. Dip one side of the cake into the cheese sauce and combine the two pieces together like a sandwich. This should give you two combined cakes with the cheese sauce in the center.
  3. Then, coat the entire cake with cheese by dipping it into the cheese sauce on all sides.
  4. Lastly, cover the cheese-coated cake with pork floss. The cheese helps make the pork floss hold better.  
  5. You have now completed your pork floss cake! Have a soft and fluffy cake as you enjoy its melty cheesy goodness in every bite.
