If I’m short on time, I opt for microwave-steamed eggs, but they can be tricky to control and may not turn out perfectly. If I have enough time, I recommend sticking to steaming the eggs in water for better results.

In today’s recipe, I’ve taken the classic steamed eggs to a new level by incorporating savory minced pork and tender tofu.

Exploring the Ingredients of Silky Steamed Egg

Eggs: The number of eggs should match the egg-to-water ratio (1:1.5) to ensure the best firm texture. If you want it to be less firm, use more water. The eggs are beaten until smooth. After mixing the eggs with the water, you can remove the bubbles on top using a strainer.

While some perfectionists may choose to strain the egg mixture to achieve the smoothest texture possible, I often skip this step for the sake of simplicity. Ultimately, the choice is yours, and both methods can yield delicious results.

Water: The water temperature should be between 104°F and 122°F. While you can substitute water with chicken broth for a richer flavor, I’ve found through my testing that using room-temperature water doesn’t significantly affect the final outcome. Therefore, feel free to use warm water or chicken broth based on your preference and availability of ingredients.

Salt: Adding salt to the egg mixture is essential because without it, your steamed eggs may not set properly. Salt helps to stabilize the protein in the eggs, allowing them to coagulate evenly during the steaming process.

Tofu: Use whatever tofu you have on hand.

Minced pork: Minced pork: If pork isn’t part of your diet, you have the flexibility to substitute it with other protein options such as beef or chicken.

Diced carrot: The primary vegetable I used is Diced carrot. However, you can also use a variety of other vegetables such as bamboo shoots, bell peppers, green beans, shredded cabbage, broccoli stems, cauliflower stems, yu choy, or Chinese broccoli as alternatives.

  • 3 eggs
  • 2g salt
  • Warm water (1.5 times the volume of eggs)

Topping

  • 100g minced pork
  • 2 tbsp cooking oil (for stir fry the pork)
  • 10g green onion (5g used for stir-frying the pork and the remaining 5g reserved for garnishing the dish)
  • 5g ginger
  • 5g garlic
  • 2g salt
  • 2g chicken bouillon powder, optional
  • 1 tbsp light soy sauce
  • 10g carrot
  • Cornstarch slurry (2 tbsp cornstarch + 3 tbsp water)

Once the water in your steamer is boiling, carefully place the dish with the tofu and egg mixture into the steamer. Cover the dish with a lid to prevent water from dripping in. Alternatively, you can cover it with plastic wrap, making sure to poke a few holes in the wrap using a toothpick. Steam for approximately 15 minutes, or until the eggs are set.Steam the egg

While the eggs are steaming, prepare the minced pork mixture. In a separate pan, sauté the minced pork until it changes color.
