What To Know About Okra and Eggs
Okra is a green vegetable packed with essential nutrients, including polyphenols, magnesium, folate, and vitamins A, C, and K, to name a few. It is also called lady’s fingers and is recognizable for its green fuzzy skin and pods carrying white edible seeds.
There are numerous ways to prepare okra, ranging from boiling, as demonstrated in my recipe for Boiled Okra With Spicy Savory Sauce, to stir-frying and beyond.
It is well known for its silky, slimy interior and crispy exterior when eaten. The taste is mild, grassy, sweet, and somewhat similar to eggplant. You can eat this every day and enjoy its health benefits, from lowering cholesterol levels to reducing inflammation and managing blood sugar.
In today’s Sautéed Okra and Egg Recipe, I’ve incorporated blanched okra into a savory egg mixture, creating a dish that’s both nutritious and flavorful.
The purpose of boiling okra
Okra can sometimes have a slimy or gooey texture. Boiling it briefly helps to reduce this sliminess and makes the okra firmer, which improves its texture in the final dish. Additionally, par-cooking the okra ensures it is partially cooked before adding it to the egg mixture.
Ingredients:
- 500g Okra
- 4 Eggs
- 1 teaspoon Salt, or to taste
- 2 tablespoons Oil
How to make Okra and Egg Recipe:
Prepare the Okra: Start by bringing a pot of water to a boil. Blanch the okra in the boiling water for about 10 seconds to slightly soften them. Remove the okra from the water and slice it into approximately 0.5cm thick slices, discarding both ends. Set aside.
Mix the Eggs: Crack 4 eggs into a bowl and add a teaspoon of salt for seasoning. Mix the eggs and salt together until well combined.
Combine with Okra: Add the egg mixture to the blanched okra slices. Stir the mixture until the okra is evenly coated with the eggs.
Cooking Process: Heat oil in a pan over low to medium heat. Once the oil is hot, pour in the egg and okra mixture. Cook the mixture, stirring occasionally, until both sides are golden brown and the eggs are fully cooked through.
Finishing Touch: Use a spatula to “cut” the cooked mixture into small pieces. Gently shake the pan to ensure even cooking.
Serve: Once the sautéed okra and egg are fully cooked, remove them from the pan and transfer to a serving dish. Serve hot and enjoy!
