Wash and peel the potatoes.
Cut the potatoes into a rectangular shape. The ends should be cut off to create the shape.
Place the potatoes on a chopping board and arrange the chopsticks or bamboo skewers on both sides of the potato. The purpose of the chopsticks or bamboo skewers is to serve as a stop to prevent you from cutting all the way through.
Slice the potatoes lengthwise without cutting all the way through. I recommend 1/4-inch wide slices and not too wide. Narrower slices make it easier to open up the accordion potatoes.
Next, flip the potatoes to the other side and cut diagonal slices. Make sure the chopsticks or bamboo skewers are still placed on the sides. After cutting, you should be able to make a spring-like motion, similar to a slinky.
Wash the sliced potatoes in a bowl of water to remove excess starch to make them crispy. If you are not yet going to cook the potatoes, you can keep them in cold water to prevent them from turning brown.
After washing in water, pierce the bamboo skewers onto the potatoes. Before doing this step, I recommend soaking the bamboo skewers in cold water to prevent them from burning when cooked in the air fryer.
Carefully stretch out the potatoes to show the accordion-like design.
Place the accordion potatoes in the air fryer, spray the exterior with oil, and bake at 180°C or 356°F for 20 minutes.
Add extra flavor with your favorite sauce, such as ketchup or hot sauce.
