Shrimp Chow Fun Recipe

Ingredients
  

  • 500 g of fresh wide rice noodles
  • 2 eggs for scrambled eggs
  • 20 g of green onions
  • 20 g of minced garlic
  • 20 g of shiitake mushrooms sliced, I prefer using fresh shiitake mushrooms, so there's no need to rehydrate them.
  • 100 g of vegetables
  • 2 tablespoons of cooking oil with one reserved for scrambled eggs and the other for chow fun. I prefer using peanut oil for this recipe.
  • 1 teaspoon of salt
  • 1 tablespoon of light soy sauce
  • 1 tablespoon of dark soy sauce
  • 1 teaspoon of cumin powder
  • 150 g of shrimp
  • 20 g of green onions garnish

Instructions
 

  • Gently toss and separate the wide rice noodles in a bowl or plate. This makes it easier to cook for later during the stir-frying step.
  • Prepare the ingredients by beating the eggs and chopping the vegetables and other flavoring ingredients. If using uncooked shrimp, prepare the shrimp by cleaning and cooking it in the pan.
  • Heat a pan with oil and cook the 2 beaten eggs. Cook until you get chunks of scrambled eggs and set aside.
  • Heat the pan with oil again and cook the green onions and garlic.
  • Add chopped shiitake mushrooms and stir-fry.
  • Add your preferred vegetables and continue tossing and stir-frying.
  • Next, place the fresh wide rice noodles on top.
  • Season with salt, light soy sauce, dark soy sauce, and cumin powder.
  • Mix in the scrambled eggs, cooked shrimp, and more green onions.
  • Stir-fry the dish until the ingredients are well combined.
